Everyone has been going absolutely insane over those “sushi bakes” or the “nori wraps” and while they DEFINITELY look delicious, I can’t fathom purchasing all those ingredients to make those dishes when in reality, I’m gonna be the only one eating them AND I’ll go ahead & say it – I’m just not a huge fan of Nori. YES, I enjoy sushi & don’t mind the small amounts of it wrapped in the sushi, but having the Nori paper being front & center as the sole vessel for some of these bakes & dishes kinda grosses me out. It’s definitely the texture and its definitely the flavor.

So, for all my OTHER Non-Nori-Lovers out there – this dish is for you! This is perfect for summer, quick to make and is just a cool lunch! Crisp cucumber, creamy avocado, some crunchy lettuce to keep it all together with the always-pleasing Bang Bang Sauce mixed with some delicious, canned pink salmon are all wrapped ((or folded up?!)) into delicious Lavash bread for a lighter feel!
I knew I wanted this dish to be not only delicious but relatable. I don’t personally keep Nori paper or sushi rice in my home nor do I ever have leftover rice – I’m sure many households have their variations of leftovers and things that they deem “normal” but I figured the ingredients I decided to swap in & out for my variation of this dish were pretty easy to find & relatable – NOT TO MENTION DELICIOUS.
Sandwiches for summer are pretty boring & par for the course – so what better way to jazz them up & switch it up than finding a new type of bread with a different kind of protein to keep things fresh and exciting! I love the idea of fresh green veggies with their cooling qualities, crunchy textures & non-competing flavors! Bang Bang Sauce is such a recognizable flavor & can be amped up to be spicy, a little sweeter or just a good middle-road to please anyone you choose to make this for!
This has also been my first experience using Lavash Bread – which has an extra 6G of PROTEIN in it so that’s a great added benefit! I loved the thin, pliable texture of the bread, and the fact that it doesn’t get soppy or soggy with all these delicious ingredients stuffed in! Choosing to “fold” this sandwich rather than wrap it up also gives it a fun & funky feel – because we are ALL COOL KIDS here! *wink*
Feel free to swap out the pink salmon for tuna salad – I’m not sure how ya’ll make your tuna salad but I make mine with mayo, Greek yogurt, thinly sliced celery & sweet relish – I’ll bet that would be JUST as delicious – make it your own! The freedom with my version of this Fold-Up sandwich is supposed to be freely pleasing for all who come across it. Happy Summer & Let’s Get To It!
• 1 whole piece Lavash Bread
• 1 can pink salmon, 5 oz
• 12 – 15 thin slices cucumber
• ½ avocado, sliced
• Small handful of lettuce – whatever kind you’d like!
• S+P sprinkles for avocado & cucumber slices
• ¼ cup Light Mayo
• 3 TBS Sweet Thai Chili Sauce
• 1 TBS Lime Juice
• 1 TSP Honey
• ½ TSP Sriracha (optional)
• ¼ TSP garlic powder
• 1 TBS thinly sliced green onions
Firstly, mix up your Bang Bang Sauce and add in your choice of canned tuna or salmon – just remember salmon is a tad sweeter than canned tuna!
Set aside in the fridge until all your other ingredients have been sliced & ready.
Lay out your piece of Lavash bread horizontally on a large cutting board.
Find the middle & slice HALFWAY up through the middle of the bread. Once the slice has been made, you should be able to visualize 4 quadrants for your other 4 ingredients.
BOTTOM TO TOP – LEFT TO RIGHT
I like to put the lettuce on the first bottom left side so then when it folds UP for the first fold, it will be held in place with the Bang Bang Salmon.
The top, left hand quadrant is where I plop the Bang Bang Salmon.
Next, the top right hand quadrant is where I layer the cucumber slices – don’t forget to sprinkle them with S+P!
Finally, I like to spread out the avocado slices on the bottom right hand quadrant, so for that final fold they will hold themselves in place as well & act as a glue for the cucumber slices! Also don’t forget to sprinkle the avocado slices with S+P as well!
NOW – let’s fold! Don’t be scurred!
All 4 ingredients are sitting pretty each in their little quadrants, right?
OK – start with the FIRST quadrant ((bottom left hand corner) and gently smash the lettuce down and fold UP over top of the Bang Bang Salmon.
Give it a little pat!
Next – fold the 2 left hand quadrants that are just the underside piece of bread, now fold them OVER (to the right, to the right y’all) over top of the cucumber slices.
Give it a little squish!
Lastly, you got this! Fold the final quadrant DOWN overtop the avocado slices.
Everyone should be snug & stay in their place! You can definitely use BOTH hands to ensure ultimate-tuck-age before cutting in half.
Serve immediately! I’ve even made an extra little bowl of Bang Bang Sauce for extra dippage or schmear to extend the ultimate flavor of your Fold Up Sammich! Enjoy each bite of ultimate summer!
Wrap or Fold? I honestly never thought about it. I enjoy a good wrap with a good lil press on it – but that’s not a summer sandwich! The ideal summer sandwich in my humble opinion is all quick, cold ingredients that hit the spot on a hot day!
Perfect for a picnic, for the pool, for sitting or simply enjoying the AC in the comfort of your home to escape the heat! Any way you decide to enjoy this Bang Bang Salmon wrap / fold / sandwich is fine with me – just as long as you enjoy it!
Thank you all so much for your patience with me over the past few months.
