Since TikTok may be banned soon, I decided to take my limited knowledge I’ve gleaned from that platform & make something new & delicious shine out of it!
Let’s start from the beginning – AKA, February 2020 right before the pandemic made itself known. I did not even have the TikTok app on my phone but EVERYONEEEE was going insane over that Baked Feta Pasta that OF COURSE made itself famous on the TikTok. So that’s where my limited obsession begins.
I still don’t scroll thru TikTok because the whole platform just overwhelms me. It seems very bright, the screen is stretched out really big, and I honestly just don’t understand it. Plus I seem to get a lot of BS videos & weird shit in my feed. So I stick to Insta Reels. Yes, I might be showing my age.
ANYWAY.
I made the Baked Feta Pasta & if ya’ll have followed me at all, loved me at all, or know me at all – I sadly wasn’t impressed. I re-posted and re-branded (in my own terms, calm down) the viral pasta and ELEVATED the F out of it, and now I love it.
I’m very happy to report that I know we all went GA-GA over those Big Mac Smash Tacos – trust me, I’m still bat-shit crazy over them. I wanted to change nothing. They are SO easy, they can be made ahead of time and they definitely scratch the itch of nostalgic McDonalds.
Big Mac Tacos – let me continue. They are perfect. SO versatile. SO easy to make super-healthy swaps! Cause that’s what we’ve been doing and they are nothing short of amazing.
So then my brain went a little further – how can I put a GREEK spin on this??
*newsflash* we have been obsessed with Greek Salads lately.
Obviously Mediterranean food is already super fresh & super healthy, so clearly I wanted to stay in that beautiful realm of delicious-yet-healthful food. Ground Lamb is already pretty lean, so – check. Toppings similar to the Big Mac Tacos without interfering with the beautiful meat – check. Using the exact same style & method of using Low-Carb baby tacos and cooking them griddle-style – check.
Oh yea. It’s all coming together now. #IYKYK
So….GREEK SMASH TACOS.
All the things we clearly loved about the Big Mac Smash Tacos, but with healthy, crave-worthy Greek flair! And yes, you *could* use Ground Turkey or Ground Chicken but that’s boring AF and I personally feel like those proteins need too much *oomph* to really sell as a Greek Smash Taco base.
Swapping out the protein, adding in some amazing seasoning & no “Big Mac Sauce” in sight – just creamy, cool, healthy tzatziki! A few other surprises you may or may not see coming – its up to you to stay tuned & see if this would also float your boat!
I also love that there are NO leftovers with this meal. YUP. We are able to make this for 2 people and it is the perfect meal. Delicious, filling, low-carb and healthy AF. How many meals can boast that?
I just want to also point out that this meal is MINIMAL in prep & cook time – like you can literally PREP and COOK these smash tacos in less than 15 minutes. Its truly amazing & should be celebrated by many. Which is what I’m here for! To bring excitement & EVEN MORE life to delicious things I learned on Tik Tok (even if they are very few) So without further adieu, let’s get to it!
• 1 LB Ground Lamb
• 8 Mission Low Carb Mini Tortillas
• 1 Shallot, finely diced
• 1 TBS Gustus Vitae Greek Seasoning (or any Greek seasoning you prefer)
• ¼ cup finely crumbled Reduced Fat Feta
• 1 cup Tzatziki of your choice (sometimes we make it homemade, but that’s for another day)
• ¼ cup finely diced Roma Tomatoes
• ½ cup finely shredded lettuce of your choice (we used green lettuce)
• 3 mini Persian cucumbers, sliced thin
This meal is so delicious & pain-free that I really want that to be the first “step” – to remember just howwww damn easy this should be for you!
Plus the enjoyment is MERE MINUTES away so don’t spoil it with a bunch of stress about the steps.
Honestly my husband and I make this meal together because its so easy.
One of us preps the tortillas & the other preps the veggies & the sides – EASY.
So I like to get my sides & veggies done first.
I will also take this time to make an author’s note – I realize that my pictures show raw shallots on top – this route is ALSO FINE, but I have made this meal a few times with a few tweaks each time and just trust ya girl – put the onions on the meat with the tortilla and cook it!
SO ANYWAY.
Slice & Dice the shallots – set aside with the Feta, Ground Lamb & Tortillas – that step is down below!
Slice the Roma Tomatoes, the Persian Cucumbers & the Green Lettuce – shit, make a salad if you want on the side rather than toppings for your Greek Smash Tacos – that’s what we did once!
VIOLA! You’re done with the veggie prep! That should have taken you 5 minutes.
Now its time to prep the tortillas – another 5 minutes.
You’ve got this, dammit!
Firstly, lay 4 of the Mission Mini Tortillas on a large plate and have 4 more at the ready.
Taking a golfball sized hunk, gently mash the Ground Lamb onto each of the Mini Tortillas.
If you have some meat leftover, distribute it evenly onto each of the tortillas and evenly spread that shit to the edge of each Tortilla.
Next, measure out the Greek Seasoning and sprinkle overtop each meat-covered tortilla.
Use your *clean* fingers to lightly crumble the Reduced Feta Chunks into more manageable pieces and gently mash that overtop each of the meat & Greek Seasoning covered Tortillas.
Also take the finely diced shallot & push that in with the meat & Feta – idk what it is about a slightly charred onion on my burger / smash taco but it sends me over the fucking moon.
THAT’S IT.
You are ready to throw these babies on the griddle!
We like to use our “flat” grilled cheese pans – they are perfect and can hold 4 and 4 tortillas so everything cooks together so there’s no waiting!
Heat your choice of griddle to Medium-High heat.
Spray with Nonstick Spray – we like the Trader Joe’s Coconut Oil Spray because it gives everything a niiiiiice crunch & char factor.
Lay each Tortilla MEAT-SIDE DOWN.
Lay all 8 down and set a timer for 3 minutes – and give them a lil smash or press with the back of the spatula but then, DON’T YOU TOUCH THEM.
Don’t Flip them, don’t Move them – just DON’T.
This will allow the meat to crisp up (because its such a thin layer) and the Feta will melt and the Shallots will sizzle!
AHHHH SO DELICIOUS.
Next, carefully flip each tortilla over so the meat is facing up.
Set a timer for another 2 minutes to get the tortillas nice & toasty.
Remove from the skillet and serve IMMEDIATELY.
Top with veggies (or not) top with a spoonful of Tzatziki (or not) and just go to town!
The Greek Seasoning we chose has lemon rind, coarse black pepper, sea salt, oregano AND garlic – WHEW you will taste it!
No flavor hides in my Greek Smash Tacos – each one is front & center – just the way I like it *wink*
Enjoy these any damn way you please!
I really don’t know who deserves credit for the OG Big Mac Smash Taco but thank you for lighting the torch & leading the way.
You walked so I could run.
Trust there is no sarcasm & zero shortage of love for that OG Smash Taco – but I knew I had to make it better.
The crispiness of BOTH SIDES of that miraculous lil tortilla is what does me in.
It folds SO PERFECTLY like a real taco but with all the things we love about a true Smash Burger! I really just can’t get over the perfection of this meal.
But, I guess you can be the judge! Try them both, thank the TikTok peoples (probably FBI people living in ur phones) and humbly thank meeee for this side-avenue piece of Greek deliciousness!
YIAMAS!
