Hellooooo friends! Taking a week off makes me feel like I always need to re-introduce myself- so today’s entry is definitely gonna be easy, right up EVERYONE’S ally, and no stress — which is kind of exactly the vibe I need right now!
Thank you to so many of you who reached out with your well wishes for my BIRTHDAY last week!
Thirty Seven.
Jzzzzus. Can you believe it? I can’t either, trust me.
It was nice to take a break from writing or creating content – no lie. Sometimes I feel like I just need 1 week off, sometimes I just wanna make reels & take a whole month off and call it a day. Its always a changing mindset.
Jumping back into posting is always gives me a little feeling of imposter syndrome - so in the spirit of staying the hell away from those kind of negative feelings, I’m excited to introduce my Salmon Dip because it is right up everyone’s alley and will always be a return-favorite.
Work and Emotional life in general is just simply *kicking my ass* right now so I’m owning it and allowing myself to chill the hell out on as many levels as I can without drowning in self-doubt or self-sabotage. Yes, the rope is a tightwire – but I haven’t died from a bad day yet.
Being aware of burnout and overall intense emotions is a new feeling and ownership for me, so bear with me because I’m always optimistic it will somehow make me better in the end!
Resetting is something so important to me – and probably to you too! – which is why I just wanna throw it out there that life is hard enough. We need to make room and time for fun, and if we can’t, that’s OK and we just gotta roll with it!
So last Friday I obviously didn’t post anything, but that was because my sweet husband booked me a HEAD SPA appointment!
Oh Em Gee it was Glorious. With a capital G.
I made a whole reel about it and stupidly felt the need to give the PSA that it wasn’t food related – dumb on my part because people were INTRIGUED. As they should be. It was an amazing experience. You should go check it out – at the very least look at my reel and hopefully there’s a Head Spa close to you!
ANYWAY.
So my birthday celebration(s) spanned over 2 weeks. I definitely felt spoiled and loved – of course, Chris was the absolute sweetest planning meals, quick getaways and little surprises all along the way!
So today in the spirit of continuing to give myself grace, I present to you yet another EASY PEASY but delicious as hell recipe!
Because my birthday may be officially over, I just now gotta navigate the highs & lows of exisiting all over again :)
My Salmon Dip is inspired by leftovers and elevating a cheese spread that we already know & love!
This dip is perfect for a last-minute Happy Hour, some relaxing porch sittin’ or even just a snack to satisfy YOSELF – because we all deserve that 100% from time to time!
I’m seriously so chill today that I literally don’t even have a backstory for this dip – nor am I going to force myself to say anything weird or highly praising of it.
I’m pretty sure its exactly what I think it is – I looked in the fridge and saw random items and thought “why the hell not? Let’s give it a go.”
And Salmon Dip was born! So, kick back, relax (give yourself permission to do so!) and enjoy this super fun, easy & yummy dip! Because sharing recipes & creating content doesn’t have to be large scale or grandiose all the damn time!
• ¾ cup flaked, baked but chilled Salmon filet
• ½ cup Alouette Garlic & Herbs Spread
• Juice of ½ lemon
This recipe is definitely easy, so don’t make it hard on yourself!
I usually cook a larger salmon filet for lunch one day and have leftover salmon that’s cold in the fridge so that’s literally how this was concocted!
Take a fork and gently flake the salmon filet.
Luckily Alouette is a soft cheese spread so it doesn’t need to be room temperature.
Measure out the salmon & Alouette into a bowl and stir gently to mix.
The fresh lemon juice will really liven up the garlic yumminess of the dip and make it even easier to mix, resulting in a perfectly cheesy dip.
THAT’S IT.
Of course you can add more lemon juice if your heart desures and OF COURSE you can adjust the amounts of salmon-to-Alouette ratio if you’re looking for a thinner spread or if you have more or less of one ingredient!
Seriously, we vibin’ here. There is no wrong way to make or enjoy this dip! I hope you enjoy it to the fullest and with someone who will enjoy it as equally as you do!
Serve with Roasted Garlic Triscuits, Everything Bagek Crackers, or Plain Wheat Thins – both are perfect & delicious options.
Not to keep beating a dead horse, but you never know who needs to hear this shit – please allow yourself to take a step back – or as many as you need! – sometimes because that small act of self-care and self-awareness if you’re struggling with ANYTHING can really save your emotions toward yourself in the long run.
That is the thought process & spirit behind sharing this recipe with you – minimal effort but maximum reward! Nothing fancy, but something to be happy to accomplish.
I’m feeling very hippie-dippie today, friends. Perhaps its my newly bestowed 37 wisdom?!
Who knows, just be kind AF to yourself and as many others as you can. Some deserve it and some don’t, just choose wisely who you share this Salmon Dip with *wink*
Whip up (literally) this delectable dip and see just how yummy and easy it is for yourself! Have a great weekend y’all, we all deserve it.
