Damn Good Chicken

You might have heard this recipe be called other things – maybe not. All that matters is that you make it. Sometime, in your lifetime. Preferably now, but, hey – read the rest of my entry at least & then make the right decision for yourself. Which is to make it.

A few years ago, my sister-in-law excitedly told me about this amazing recipe called Peruvian Chicken. She said she had seen many variations lately, but she said THE BEST version had a ton of chopped rosemary – now that’s speakin’ my damn language. She made it for us one weekend when we were visiting & I was immediately hooked! It’s definitely best marinated overnight ((or even 24 hours if you can wait that long – trust, its that good!)) & then thrown on the grill for that sticky, charred flavor that everyone loves! Karen calls her recipe Man Pleasing Chicken – I didn’t want to completely steal her thunder so I had to think of another catchy name – plus really, who cares what pleases men? *wink* Once again, family recipes with a twist have made its way to the forefront of the blog this week & I'm so thankful to have a sister-in-law that loves to cook & share her great secrets with me just as much as I do – love you & thanks Kirin! ;)

ROSEMARY.

Rosemary is such a delicious & welcome herb. It’s earthy, sweet, floral taste & fragrance is amazing in food & drink alike! I always keep a pot growing year-round. I love a sprig of it in an alcoholic beverage & we definitely love slightly burnt rosemary with our steaks in a cast-iron!

The health benefits of rosemary may surprise you as well! Full of antioxidants & anti-inflammatory components – plus it’s a beautiful-smelling plants that acts as a natural bug repellant! If I could use enough rosemary, I’d plant that shit everywhere!

This chicken stays moist from the amazing marinade and the flavors pair well with just about ANY sides! Our favorite way is to serve it with Naan, corn salad & tzatziki – Mediterranean style! BBQ Chicken on the bone is always a delicious treat in the summertime but it takes FOREVER on the grill – look no further than this recipe for a quick & delicious option that is sure to please everybody!

Tangy, sweet & smoky from the grill – I really can’t get over how damn good this chicken is – with only 5 ingredients! I guarantee this will quickly & easily become a summer staple in any household! Especially the fact that the marinade is easy to mix up with all-natural and no added sugars, dyes or literal crap – this marinade might be the healthiest thing around! Be sure to double the recipe & make extra for a dip or to brush on while the chicken is grilling! However you decide to eat it – just be sure to really enjoy it. This is truly one of the most satisfying chicken recipes I have ever made & it plays its role well. People have never heard of it & you will never tire of it. I usually have to have extra to dip my chicken or toasty pita bread into, too – eeeowww!

I refuse to back down from how delicious & important rosemary is in this dish. Double, Triple, WHATEVER the ingredients in this recipe, but don’t you dare skimp on the fresh rosemary. IT IS A MUST.

So of course, y’all know this wouldn’t be a legit Cookin’ & Cussin’ blog entry if it didn’t have some sort of *Southernism* attached to it – My *additional* secret ingredient is garlic powder – absolutely changes the game. The subtle kick of garlic powder gives it such an extra BBQ-like finish that you will sit there thinking….what the hell is in this? How is this only 5 ingredients? What The What?

Ingredients

· 6 Chicken Thighs – boneless & skinless

· ½ cup Honey Dijon mustard, smooth not grain

· ¼ cup REAL Maple Syrup (sorry Aunt Jemima)

· ¼ cup Fresh Rosemary, finely chopped

· 2 TBS Rice Wine Vinegar

· 1 TSP Garlic Powder

· S+P, to taste

Instructions

Prep the things, cut the things, mix the things.

LITERALLY.

Salt & Pepper both sides of your chicken thighs.

Clean, destem & chop all the fresh Rosemary – it should smell like pure herbal heaven.

Measure out all your ingredients in a large bowl (large enough to hold all your ingredients PLUS to marinate your chicken in)

Whisk all ingredients together.

Place your chicken in the marinade & mix well to cover.

Cover with plastic wrap & place in the fridge for at least 8 hours – 24 is best!

Remove your chicken from the fridge & discard marinade ((this is why we make double!))

Grill your chicken to an internal temp of 165 degrees.

Serve immediately, but don’t burn your mouth.
